BLACK RIVER CAVIAR

Black River Caviar is the first and only caviar brand farmed in the Southern Hemisphere. For the past two decades, they have been breeding sturgeons of Russian origin under strict control in order to produce high-quality caviar to please the most discriminating palates through the world.

SIBERIAN

This variety is made from acipenser baerii sturgeon,of Siberian origin (Russia). 

Roe diameter goes from 2.9 to 3 mm, and their color ranges from dark gray to walnut brown, and occasionally gold. With a firm and distinct texture, their taste is subtly buttery, with a slight hint of dry fruit, very agreeable to the palate. 

Presentations: 20 g, 30 g, 50 g, 100 g, 250 g, 500 g, 1 kg, 1.8 kg.




RUSSIAN OSCIETRA

This variety is made from acipenser gueldenstaedtii sturgeon roe, of Russian origin.

With a 3 to 3.2 mm diameter, shades range from black to gold. These are the three grades available:

  • BRL: Black to brown

  • BRL+ : Brown to grey

  • GL: Amber to gold

Texture is firm with a unique glazed sheen, intense creamy taste with a lingering slightly nutty flavor. 

Presentations: 20g, 30g, 50g, 100g, 250g, 500g, 1kg, 1.8kg.




STURGEONS


The sturgeon is one of the most ancient fish alive today. It evolved approximately 200 million years ago during the Jurassic period, whichis why it is often referred to as "sea dinosaur".


Caviar is extracted after a long breeding process, once the female has reached the optimal maturity age.This is determined through a permanent monitoring of the fish in a personalized, individual manner. As a result of the persistent search for innovation, unique technology has been developed, allowing sexing the fish at a very early stage, thus enabling us to channel all our efforts into culturing the female to produce caviar.


Sturgeons are bred in the pristine waters of the Rio Negro whose headwaters originate in the southern highlands of Brazil.


The Río Negro river possesses excellent properties for sturgeon breeding. The Baygorria Dam, where our plant is located, stands on basaltic soil, free of contaminants and pollution, being a completely natural area.

The raceway system is fed directly with river water through gravity, avoiding the use of electric pumps, with a volume of flow of over 2,500 liters per second (260.000.000 liters per day). This free-flow system, which avoids water recycling, differentiates them completely from the rest of the producers, as they are able to mimic the real flow of a river in their facilities, providing a real river feel for the fish, as if in the wild.


There are mainly four factors that make this possible: the natural environment, the strict technical and sanitary controls under which sturgeons are bred, the use of our perfected and characteristic "recipe" to make caviar and the traceability. 


All of our products and processes have been certified and endorsed by the relevant international and local authorities: United States (HACCP), European Union(PP-34F), the Uruguayan Agency of Aquatic Resources DINARA(C-34),Brazil(DIPOA),Argentina(SENASA), Chile, Japan, and Russia, among other regions. Furthermore, all of the exports undergo strict controls by CITES (Convention of International Trade in Endangered Species), ensuring the products' authenticity. Besides guaranteeing the quality of our products, they seek to optimize distribution processes in order to reach any part of the world without product in the best condition, that is to say, with the highest quality.
