The Sparkling Wine of Spain

Speaking of Spanish food, many people would think of potatoes, olives, ham and so on. In fact, as one of the major grape producers in the world, Spain also produces famous wines. Wine is indispensable on the Spanish’s dining tables, and they prefer to drink wine when eating ham. Surrounded by the sea on three sides, Spain has Mediterranean and marine climate. Grapes grown in the local soil are particularly sweet and refreshing. And the wine made of those grapes has delicate and mellow taste and high alcohol strength. In 2017, Spain exported 2.28 billion liters of wine, ranking fi rst in the world, followed by Italy and France. Good price and high-quality are the advantages for Spanish wine to seize the market.

When it comes to sparkling wine, France has champagne, Italy has prosecco and asti, while Germany has sekt. What does Spain have? Of course, it's the national brand, cava. Cava and champagne are brewed in the same way, but the grape varieties used are different, so the tastes are quite different. If French champagne is a polite gentleman, Spanish cava is a passionate bullfi ghter.

Macabeo is the major grape variety for making cava. It has slight fl ower and lemon fl avors, with a hint of bitterness similar to green apricot in the aftertaste. Xarello has rich flower and pear or muskmelon flavors. Parellada contains natural peracid and lively citrus flavor. The three native Spanish varieties complement each other. Therefore, the wine brewed from them is well-balanced. It is not as sweet as prosecco sparkling wine, nor as nutty as old champagne. Overall, cava has a fl avor similar to that of non-vintage champagne and American sparkling wine.Normally speaking, there are only two types of cava sparkling wine: white sparkling wine and rose sparkling wine, but the former can be subdivided according to the sugar content. Cava wine with the lowest sugar content is called Extra Brut. With the increase of sugar, it is categorized as Brut, Extra Seco, Seco, Semi-Seco and Dulce in sequence. Cava Dulce has high sugar content and sweet taste. The most common cava in export markets are Brut and Emi-Seco. Wine should be stored in cellars for at least nine months according to minimum standards, but the best cava wines are usually stored for two to three years before they go on sale. The uniqueness of Cava is that its secondary fermentation and aging are completed in wine bottles to ensure that the bubbles are entirely produced by natural fermentation.

Today, there are more than 230 million bottles of cava produced each year, about a third of the number of champagne. 200 million bottles of them are produced by two giants, Codorniu and Freixenet. In recent years, with Spanish cava’s growing momentum in the international market, the share of domestic market has decreased, and the export market has accounted for over 60% of the total. The largest buyers of Spanish cava are Germany, Britain, Belgium, the United States and Japan. China is also one an important purchaser.
